In the heart of the Alaskan sub-zero winters, we discovered that extreme cold curing produces a superior dough. The yeast slows down, letting flavor develop over 24 cold hours. When it hits our blazing hot brick oven, the sudden temperature shock creates a crispy crust that cracks elegantly on the first bite, while holding a warm, moist, chewy center.
